Going by many different names - silverbeet and perpetual spinach are just two - chard is available all year round and a tasty alternative to spinach and cabbage. Eaten raw the bright green leaves are a succulent source of vitamins A, C and K; boiled or steamed, the vegetable’s slightly bitter taste is removed and makes a perfect complement to many mediterranean dishes.
