A fresh and fruity apple cider vinegar is made by an artisan producer using cold pressed organic apple juice. It is naturally fermented, unpasteurised and unfiltered and still contains the “Mother” culture which creates a cloudy appearance and sediment. This harmless feature of natural vinegars can be left undisturbed at the bottom of the bottle and used as a vinegar starter (see below).

For a simple vinaigrette, whisk together 2 tbsp of cider vinegar with 6 tbsp of olive oil, add 1tsp of honey with a dollop of wholegrain mustard and season to taste.

Other uses include as a daily tonic (mix 2 tbsp with water and drink) or as a starter to make your own vinegars. Although the process is nuanced the simple version is to mix some of the vinegar including the mother (bits) into an alcohol such as wine (without sulphites), beer or cider and leave covered in a cloth in a dark place.
